2 oz of cashews (about 2 handfuls or 40 nuts)
1 tbsp olive oil
1/2 tsp garlic powder
1.5 tbs nutritional yeast flakes (or more if you like a more cheesy taste)
Juice of 1/2 lemon
Salt to taste
Anything you like cheese on!
Tips & Substitutions
For those of us that don’t do well with dairy or are trying out dairy-free, this cheesy spread can really help satisfy cravings.
If you like to soak your nuts to remove anti-nutrients, soak your cashews for 2-3 hours and then dry in a single layer in the sun, in a food dehydrator, or at the lowest possible temperature in the oven (optimally around 120F).
If your blender or food processor is large you may have to make more cheese to make the mixture blend properly.
Add all your ingredients to a small blender or food processor.
Process the ingredients until mixed.
Scrape down the sides and add just a bit of water then blend again. The goal here is to get the mixture a smooth but still thick paste.
Continue adding water gradually and mixing until you get the desired consistency.
