Ingredients

  • 2 oz of cashews (about 2 handfuls or 40 nuts)

  • 1 tbsp olive oil

  • 1/2 tsp garlic powder

  • 1.5 tbs nutritional yeast flakes (or more if you like a more cheesy taste)

  • Juice of 1/2 lemon

  • Salt to taste

Tips & Substitutions

  • For those of us that don’t do well with dairy or are trying out dairy-free, this cheesy spread can really help satisfy cravings.

  • If you like to soak your nuts to remove anti-nutrients, soak your cashews for 2-3 hours and then dry in a single layer in the sun, in a food dehydrator, or at the lowest possible temperature in the oven (optimally around 120F).

  • If your blender or food processor is large you may have to make more cheese to make the mixture blend properly.


Instructions:

  1. Add all your ingredients to a small blender or food processor.

  2. Process the ingredients until mixed.

  3. Scrape down the sides and add just a bit of water then blend again. The goal here is to get the mixture a smooth but still thick paste.

  4. Continue adding water gradually and mixing until you get the desired consistency.
