0.5 lb leftover cooked chicken (e.g. breast or thigh), torn apart into small pieces
4 slices bacon
1/4 cup mayo
1 green onion, thinly sliced
Sauté bacon in frying pan over medium high heat until crispy and fully cooked, flipping once during the process. Remember to give that bacon space and use a splatter guard if it's starting to get messy.
Remove bacon from pan leaving fat in pan and let the bacon cool.
If chicken is not cooked, you can fry it in the bacon fat. If you are cooking your chicken in this step, wait for it to cool before the next step.
Chop bacon in bite-sized pieces. Mix all of your ingredients together in a bowl and serve!
