Ingredients

  • 1 large English cucumber in rounds or spears

  • 1.5 cups filtered/spring water

  • 3 tbsp white vinegar

  • 3/4 tbsp kosher, Himalayan, or pickling salt

  • 2 tsp black pepper

  • 6 dill sprigs

  • 1 bay leaf

  • 1/2 tsp red pepper flakes

  • 1 shallot, sliced thinly

  • 4-6 garlic cloves, peeled and crushed

Tips & Substitutions

Substitutions

  • White Vinegar: Apple cider vinegar though this does change the taste slightly


Instructions:

  1. Add all ingredients except cucumber to 1 quart jar or split into smaller jars.

  2. Mix.

  3. Add sliced cucumber.

  4. Put the lid on your jar and shake to combine fully.

  5. Put your jar(s) into the refrigerators for at least 2 days. Keep your jars in the front of the fridge and give them a shake whenever you go into the fridge to make sure the flavors combine well.
