1 large English cucumber in rounds or spears
1.5 cups filtered/spring water
3 tbsp white vinegar
3/4 tbsp kosher, Himalayan, or pickling salt
2 tsp black pepper
6 dill sprigs
1 bay leaf
1/2 tsp red pepper flakes
1 shallot, sliced thinly
4-6 garlic cloves, peeled and crushed
Tips & Substitutions
White Vinegar: Apple cider vinegar though this does change the taste slightly
Add all ingredients except cucumber to 1 quart jar or split into smaller jars.
Add sliced cucumber.
Put the lid on your jar and shake to combine fully.
Put your jar(s) into the refrigerators for at least 2 days. Keep your jars in the front of the fridge and give them a shake whenever you go into the fridge to make sure the flavors combine well.
