Ingredients

  • 1 lb grass-fed lamb liver

  • 1 large onion, diced

  • 4-6 cloves of garlic, minced

  • 1 bunch of rosemary, stems removed and chopped

  • 1 bunch of thyme, stems removed and chopped

  • 1 large avocado, removed from peel without pit (see our tip)

  • Salt and pepper to taste

Tips & Substitutions

  • We have found that depending on where and when you get your garlic, garlic cloves can be vastly different sizes. So if you garlic cloves are very large or very small adjust accordingly. As a general rule in cooking don't just follow a recipe because it says to do something. If you find yourself saying, "Shooey that looks like a lot of garlic," add less! If it was too little, make a note of it and next time add more. Recipes are guidelines not the police - you don't have to listen to them.

  • You might find this pâté a bit sweet (due to the onion). If so, sauté up some bacon before cooking the onions. Then cook the onions in the bacon fat and either eat the bacon (because who can say no to some bacon) or, if it lasts that long, add it to the pâté.

  • Although you can use a blender instead of a food processor for this recipe, I don't recommend it. You're going to have a bad time.

Substitutions

  • Lamb Liver: Beef or chicken liver. Note: Chicken liver can be a bit more annoying to deal with just because chickens are smaller and thus have smaller livers.


Instructions:

  1. Rinse liver under running water to remove excess blood. Dry with paper towels.

  2. Trim off any vessels or connective tissue and cut liver into approximately 1'' cubes (no need to be exact here because you’re just tossing it in the blender anyway - just cut the liver into approximately even small pieces if you can't be bothered).

  3. Add avocado oil to large skillet. Sauté onions on medium to medium high heat until translucent and tender.

  4. Add liver, herbs, and garlic. Sauté until liver is fully cooked - about 5-10 minutes depending on the size of liver pieces you chopped.

  5. Take pan off the heat to cool.

  6. Add avocado to food processor and pour everything from the pan into the food processor.

  7. Blend until smooth.
