1/2 yellow onion, diced
1/2 red bell pepper, de-seeded and diced
4 oz chorizo, chopped with or without skin removed
1 tbsp harissa (we use Mina)
Ghee or avocado oil for frying
Cilantro for serving
Salt and pepper to taste
In frying pan, melt ghee or heat avocado oil over medium high heat.
Sauté bell pepper and onion until caramelized.
Add chorizo and harissa to your pepper and onion mixture. When mixing it all together make sure that the chorizo is not sticking together in large clumps. Break apart if necessary.
Continue cooking until chorizo is browned and fully cooked through.
Mix in scrambled egg or top with poached/fried egg and cilantro.
