Ingredients

  • 1 cup red cabbage, finely chopped

  • 1/2 cup carrot, shredded

  • 1/2 cup broccoli, shredded

  • 1/2 mango, finely diced

  • Juice of 1-2 limes

  • 2 tbsp raw or dry-roasted macadmia nuts, chopped

  • 2 tbsp olive oil

  • Salt and pepper to taste

Tips & Substitutions

  • You can also try adding in some shredded brussels sprouts.

  • Note: For some people, the uncooked veggies in this salad can cause a bit of digestive discomfort. If this is your first time eating raw cabbage, make a small batch and make sure it agrees with you before you go all in.

  • Mango: Pear or apple
